This delicious vegetable, which you may see labeled as baby broccoli, broccolini, or asparation, is a cross between broccoli and Chinese kale. It has a slightly milder, sweeter taste than broccoli and a more tender texture. You can find it in specialty food stores and many supermarkets. If baby broccoli is unavailable, you can also use broccoli florets.

  • 1 small clove Garlic
  • 1 cup Grape tomatoes, small
  • 1 Japanese eggplant
  • 1 Red bell pepper, medium
  • 1 Red onion, medium
  • 1 Yellow squash, medium
  • 1 Zucchini, medium
Condiments
  • 3 tbsp Lemon juice, freshly squeezed
Pasta & Grains
  • 1 1/4 cups Israeli couscous
Baking & Spices
  • 1 Salt and freshly ground black pepper, Coarse
  • 2 tsp Sumac, ground
Oils & Vinegars
  • 8 tbsp Olive oil, extra-virgin
