Roasted Tomato Caprese Panzanella. We LOVE it- I just recommend using smaller pieces of mozzarella since cheese is fatty. And I only use a tiny bit of balsamic glaze. Delish! Fun Finger Foods - Cut 1 cm off the cherry tomatoes, remove the seeds. Fil w/ the tomatoe tapenade and finish w/a mini mozzarella ball. Put on a skewer. In a small bowl, mix the x virg olive oil, lemon zest & parsley. Roll the skewers in the oil, put in a serving vase or platter.
Stuck with some not-so-stellar tomatoes? Roast them to intensify their flavors, and pair with mozzarella and basil for a summery caprese salad!
