    Irish Potato Candy - no bake sweet. Ingredients 1/4 cup butter- softened, 1/2 (8 ounce) package cream cheese, 1 t vanilla extract, 4 c icing sugar, 2 1/2 c flaked coconut, 1 T ground cinnamon. Method: Med bowl, beat butter & cream cheese til smooth. Add vanilla & icing sugar; beat until smooth. Use hands if necessary, mix in coconut. Roll into balls or potato shapes, & roll in the cinnamon. Place on cookie sheet & chill to set. If desired, roll potatoes in cinnamon again for darker colour.
