Could do this with Challenge-friendly ingredients. Great option for portion control! :) 12-muffin tin + 12 eggs + any veggies/sausage/bacon you like + bake at 375 for 20-25 mins and you've got breakfast for a whole week! I recommend putting them in muffin cups to cut down on clean up too - always a plus. Definitely will make this recipe again!
