Bacon Potato and Cheddar Frittata
Potato Bacon Cheddar Frittata - Steve was looking for a make-ahead Christmas breakfast and I suggested a frittata! You can substitute ham or sausage for the bacon, use pasta instead of potatoes, add olives, mushrooms, onions or peppers, or use different cheeses or herbs in there too. Basically anything you'd add to a favourite omelet can be used in a frittata. Just prepare and chop the ingredients on Christmas Eve and add the eggs in the morning! Easy peasy.
