If it's not completely obvious at this point, I like me some ice cream :) I might as well just change this blog title to "Remember how much ice cream I ALWAYS eat?". Since I can't seem to contain myself and keep making and eating it (like EVERY day), I'm experimenting with different combinations of flavors, textures, mix-in's and bases, trying to lighten it up and make it healthier. This particular ice cream is more of a creamy, frozen, scoopable fruit smoothie than a rich, indulgent bowl of bad-for-you, overly-sweetened decadence. It's bright from the citrus and berries, with soft floral notes from the rose water, but still decadent and satisfying thanks to the coconut milk. This deep magenta ice cream is 100% Vegan, gluten-free, and has no-refined-sugar-added. It can be enjoyed as a refreshing, healthy dessert, a perfectly appropriate post-workout snack in place of a traditional smoothie, or as an anytime frozen fruit parfait with some additional fresh berries and a small handful of chopped walnuts &/or flaked, unsweetened coconut sprinkled on top. Add whatever you want, and enjoy guilt-free! XOXO Rose, Summer Berry & Coconut Ice Cream Makes ~5 cups Printable recipe here 2 cups frozen mixed berries (I used blueberries, strawberries, raspberries, blackberries, & pitted dark cherries) 2 cups light Thai coconut milk 1/4 cup honey or agave nectar, or more to taste 3 tsp rose water, or more to taste Juice of 1/2 lemon 1 1/2 tsp pure vanilla bean extract Pinch ground nutmeg Pinch of sea salt or fleur de sel In a high-speed blender or food processor, throw in all ingredients and blend until completely incorporated. Taste, and add in more honey, rose water, etc. to your liking. How to Pick A Superstar Watermelon---FifteenSpatulas.com 1. Pick a dull looking watermelon. A shiny appearance indicates an underripe melon. This applies to honeydew melons too. 2. Find that field spot. This is a creamy spot on the melon, and it's where the watermelon was resting on the ground. The field spot should be a yellowish creamy color, like shown with my watermelon: The darker the color of the creamy spot, the longer it was on the vine sweetening up. If it is white (or not even there), put it back, because this indicates an underripe melon. 3. What's all that knockin' about? I think this step matters less than the others, but a dull thud indicates an underripe melon (meaning that the flesh should not be soft. Your knuckles should bounce off the melon, and the surface should be pretty hard). 4. Pick that bugger up. Is it heavy for its size? Note: this applies to pretty much ALL produce. When I pick up onions for example, I pick the heaviest one for its size. That means it's got lots of water in there, which is better than a dried out light good. The watermelon pictured here in my post was a whopping 18 pounds! It was heavier than the other comparably sized melons around it. 5. While you've got it in your arms, make sure it's uniformly shaped. Irregular bumps indicate it may have gotten inconsistent amounts of sun or water.
