    Cilantro lime brown rice (or use Quinoa) Servings: makes 8 cups 2-1/2 cups (1 pound) uncooked basmati brown rice 4 cups (1 quart) vegetable broth (low sodium preferred) 2 garlic cloves, minced 1/4 cup fresh lime juice 1-1/2 tablespoons olive oil 1/2 to 1 teaspoon kosher salt (or more, to taste, if using low-sodium broth) 1-1/2 teaspoons dried oregano (Mexican preferred) 1-1/2 teaspoons ground cumin 1/2 teaspoon ground white pepper 1-1/4 cups fresh cilantro, chopped

    Cilantro Lime Basmati Brown Rice - Chipotle's. Whisk together the garlic (2 cloves), 1/4 cup lime juice, olive oil, salt, oregano, cumin & pepper (1-0.5 teaspoon). Add mixture and chopped 1-1/4 cups cilantro to 2.5 cup cooked brown rice. Stir to combine.
