1 gal 2% milk, 1 tsp salt, 3 tbsp lemon juice or white vinegar. Bring milk & salt to rolling boil (195 F) while stirring. Add juice & reduce to simmer till white chunks form. Strain in a colander with cheese cloth or kitchen towel. Let drain 30 min over a pan. Makes 1 lb.
Homemade Blue cheese dressing - I love Bleu cheese dressing (I buy 'Marie's' or 'Naturally Fresh' and soften the taste of it it with mayo) on my spinach salad (w/sliced egg & mushrooms, garlic & butter croutons and real bacon pieces) - I make a "meal" out of it in a big bowl. It is absolutely delish!! :)
Homemade Mascarpone Cheese. Mascarpone is pretty pricey, but it takes two inexpensive ingredients and about 15 minutes heating time to make it yourself! Used in many holiday cookies, cakes, trifles, pastry, tiramisu etc. Also a creamier cream cheese substitute!
