    Rhubarb Cobbler | The Pioneer Woman Cooks | Ree Drummond. Made this with Stevia & sugar and chia's in place of egg. I used the chia incorrectly, which might have made a difference, but overall it just didn't have enough rhubarb in it. Won't make it again.

*STEWED RHUBARB - Don’t peel the deep pink stalks! Just wash them well, trim them and slice into three-quarters to one-inch lengths. For each pound, add 1/4 cup water and cook, covered, in a heavy pan until barely tender. This takes about 5 minutes. Add 1/2 to 1 cup sugar–to suit your taste–and cook until sugar is dissolved. Stir it gently but be careful not to mash it to pieces.

Perfect Iced Coffee Recipe from the pioneer woman. Made this using a smaller recipe (just brewed one cup and let it chill in the fridge for a bit then poured over ice and added half & half). Her tip for using sweetened condensed milk to sweeten is amazing. Just be sure to put the remaining milk in the fridge so you can use it again!
