Baked Chicken with Artichokes & Tomatoes // My modifications: Add fresh shaved parmesan to tomato mixture. Double the garlic. Add approx. 1 tsp. italian seasoning to tomato mixture. Use large can or jar of artichoke hearts, drain but not too much--the liquid mixes with other ingredients to make a nice, light sauce. Bake for approx. 30 minutes before adding mozz and broiling.
