Make gluten free blueberry lemon muffins naturally sweetened with applesauce and dates instead of sugar... Makes 6 muffins Ingredients 1 cup brown rice flour 1/2 tsp baking soda 1 tsp baking powder 1/4 tsp salt 7-8 large dates ~ 1/2 cup almond or soy milk* 1 1/2 TB flax seeds, coarsely ground 1 TB lemon juice & 1-2 tsp zest 1/3 cup applesauce 1/2 tsp vanilla extract 1/2 cup fresh blueberries 1/4 cup sliced almonds, toasted @400 for 25 min.
Ok...I didn't really like these. I persevered with eating them because I didn't want to waste ingredients but if I was to make them again I think I'd seriously adapt them! Or, just make good ol' blueberry muffins with brown flour or spelt flour if I want healthy!
