Easy Restaurant Style Baked Potatoes. Baking Potatoes in half the time. Olive Oil Sea Salt Wash potatoes, prick lightly 2-3 times and cook them in the microwave for about 1/2 the time you normally would. I cooked 3 fairly large ones for 10 minutes in the microwave. You want to be able to feel a little give in the potato but not so much you can break the skin. Remove from the microwave. Brush with Olive Oil. Sprinkle with salt. Garlic Rubbed Roasted Cabbage Steaks: Preheat oven to 400F. Spray baking sheet w/non-stick cooking spray. Remove outer leaves from 1 head (approx 2 lb) cabbage. Cut 1" thick slices from top to bottom. Rub both sides of slices w/smashed garlic (2-3 cloves), brush w/olive oil, and sprinkle with kosher salt & fresh black pepper. Roast on middle rack for 30 minutes. Carefully flip cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy. Serves: 4
The BEST Baked Fish. I used thick tilapia loins and Panko Crumbs only. My recipe is basically 1/4 c mayo, 1 T. dijon mustard, 1 T. lemon juice. Stir and smear on fish. Place on parchment and press on a mixture of Panko, 2 tsp. dill and seasoned salt and pepper to taste. Bake at 450˚ for 15 min. No turning!
Cheesy Cauliflower Patties 1 head cauliflower 2 large eggs 1/2 c cheddar, grated 1/2 c panko 1/2 t cayenne pepper salt olive oil Cut cauliflower into florets & cook in boiling water until tender. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste. Coat a griddle or skillet with olive oil, medium-high heat. Form the mixture into patties 3" across. Cook until golden brown & set, about 3 minutes per side. Keep warm in oven.
