Toss chopped peppers, potatoes, zucchini, red onion and sausage (I used turkey kilbasa) with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this.
Salt and Pepper Zucchini Chips The recipe calls for a food dehydrator and olive oil. I think we all know we can fry these bad boys in coconut oil and skip the whole waiting-for-them-to-dehydrate part! :-)
