Its delightfully refreshing and sophisticated, complimenting spicy Mexican food perfectly.
Paloma Cocktail. It's tequila with a grapefruit-flavored soda such as Fresca, Squirt, or Jarritos and served on the rocks with a lime wedge...glass may also be rimmed with salt. The grapefruit soda can be replaced with fresh white or red grapefruit juice (jugo de toronja), club soda (sugar optional), and fresh-squeezed lime juice. The paloma is the most popular tequila-based cocktail in Mexico.
La Paloma Cocktail. Yield: 2 servings INGREDIENTS ½ cup freshly squeezed grapefruit juice ¼ cup freshly squeezed lime juice ½ cup tequila or mescal 2 tbsp. simple syrup* ½ cup club soda, divided
The Paloma: Pour some kosher salt on a plate. Rub half of rim of a highball glass with a grapefruit wedge; dip rim of glass in salt. Combine 1/4 cup fresh grapefruit juice, 1 tablespoon fresh lime juice, and 1 teaspoon sugar in glass; stir until sugar is dissolved. Stir in 1/4 cup mescal or tequila, add ice, and top off with 1/4 cup club soda. Garnish with grapefruit wedge.
