Paula Deen Beer Battered Fish and Chips. Made these for our St. Patrick's Day dinner. This was the best fried fish I've ever made! I put a bit too much salt on the pieces of fish before the batter though, so I will go lighter next time. I also had some nay-sayers (coughJeffcough) because I went authentic with the beer (Guinness even!) which I've never done before. :)
Perfect Beer Battered Onion Rings 1-2 cup vegetable oil, for frying 1 cup all-purpose flour 1-2 tablespoons seasoned salt 1-2 cups light colored beer 1 large onion, sliced into rings In a large bowl, whisk together flour and seasoned salt. Gradually add beer, one cup at a time, whisking to avoid lumps. Batter should be the consistency of pancake batter.
