Baked chicken - so easy, healthy, and delicious! 2 chicken breasts (on bone), 3 russet potatoes peeled and cut, 1/2 bag baby carrots cut, 1 shallot sliced. Put ingredients in a casserole dish, sprinkle with Italian seasoning, garlic, salt and pepper, pour 1/2 can low sodium broth over chicken and veggies. Drizzle with EVOO. Bake at 350 for 1 hour. YUM!
