blueberry + chocolate cupcakes: blueberries, chocolate, ganache, and a sprinkling of unicorn dust, I'm sure. I made these years ago for a friend's birthday. They looked lovely, and they're so... fresh looking even though it's chocolate, which doesn't exactly scream fresh to me.
Blueberry Cupcakes ½ cup butter, room temperature 1 cup sugar 2 eggs 1 ¾ cup pastry flour 2 tsp. baking soda 1 tsp. baking powder ¼ tsp. salt ¾ cup milk 2 tsp. vanilla ½ cup blueberry puree (2 cups fresh/ thawed BBs,¼ cup sugar 1 Tbsp. cornstarch) Preheat oven to 350 degrees. Line 12-18 cupcake pans with paper liners (or 24+ minis).
