Whole Wheat Pasta with Ricotta and Vegetables-OMG soooo good! I made it for lunch and followed recipe to a tee. For dinner I added carrot medallions (the kids like those). Gobbled. up. every. bite. Tip: mix upo ricotta mixture and set aside until ready to use. Hot noodles and veggies actually heat up ricotta because the ricotta doesn't look so good after reheating. Great meatless meal. ncb

Shrimp and Avocado Rice Bowl- this was great. I made sesame oil by sauteing sesame seeds in vegetable oil. Topped the dish with a combo of light soy sauce, lime juice and vinegar. Also added carrot ribbons and green onions.
