Baba Ganoush Soup from Eat. Live. Run.--- After reading Khaled Hosseini's new book "And the Mountains Echoed" I wanted to cook something with middle eastern flavors. This was great, everything you could want in a soup; easy, flavorful, healthy, thick, and comforting. My mom even commented: If thickened it would also make a great sauce for chicken! Miso Broiled Eggplant...I used regular eggplant and they turned out well. They taste salty and sweet with a bit of a spicy tang. we will definately be adding this to our regular veggie dish ideas
Roasted Eggplant --  cut 5-6 slits across the eggplant halves without piercing the bottom skin  brush with olive oil -- be careful! Eggplants soak up unlimited amounts of oil.  sprinkle with salt, pepper, cayenne & herbs  place the cut side down on an oven tray or grill pan  roast ~400 degrees until golden on the cut side.
