Snickerdoodles: the best recipe ever. •1/2 cup butter (1 stick), softened •1/2 cup granulated sugar •1/3 cup brown sugar •1 egg •1/2 teaspoon vanilla •1 1/2 cups flour •1/4 teaspoon salt •1/2 teaspoon baking soda •1/4 teaspoon cream of tartar For rolling: •2 tablespoons granulated sugar •1 teaspoon cinnamon 1. In a large bowl, cream together the butter and sugars with an electric mixer on high speed. Add the egg and vanilla and beat until smooth. 2. In another bowl, combine the flour, salt, baking soda, and cream of tartar. 3. Pour the dry ingredients into the wet ingredients and mix well. 4. Preheat oven to 300 degrees while you let the dough rest for 30 to 60 minutes in the refrigerator. 5. In a small bowl, combine the sugar with the cinnamon for the topping. 6. Take about 2 1/2 tablespoons of the dough and roll it into a ball. Roll this dough in the cinnamon/sugar mixture and press it onto an ungreased cookie sheet. Repeat for the remaining cookies. 7. Bake the cookies for 12 to 14 minutes and no more. The cookies may seem undercooked, but will continue to develop after they are removed from the oven. When the cookies have cooled they should be soft and chewy in the middle. Makes 16 to 18 cookies.
Mrs. Fields Snickerdoodles - Even though I may have a legitimate recipe for something, I never stop trying out new ones just in case I discover something better. This is probably why I bake so ridiculously much; I need to test out every single recipe just so I know which one is superior compared to the rest. Will there be one out there that tops this one? Doubtful.. but possible. It's apparently known as Mrs. Field's snickerdoodle recipe, but who knows how much truth stands behind that? All I know is that it's good enough to hold that title, if it really is Mrs. Field's recipe. This cookie is moister than my previous recipe and just a tad bit sweeter (which I prefer). They're also chewier and less cake-like. Mini apple pies... If you've been around a while you know that I like to make some sort of dessert or treat for my husband to take to work with him on Mondays. Food is my love language. I am not a diet friendly friend. It's just a small way that I feel I can help him with his work day...he and all his coworkers have a super long meeting on Mondays and...well, it's Monday...how can dessert not help that? It gives me a good excuse to try new recipes and now all of his coworkers expect and look forward to what I will make and send in. I've been meaning to document what I have tried here...but it's taken weeks for me to start...so we'll just start here. :) This week I made mini apple pies for him to take...and I made a large batch so that I could keep some too! This recipe makes 24 mini pies but you could easily halve it to make 12. Start by cutting up eight cups of apples into small 1/2in bits. Mix the apples with: 12 tablespoons of flour 1 1/2c of sugar 4 heaping teaspoons of cinnamon 1/4-1/2 teaspoon of nutmeg (depending on how much you like nutmeg...you could also leave it out) You will also need: 4 tablespoons of chilled butter cut into 24 equal portions. two boxes of pilsbury pie crusts (four chilled NOT frozen crusts) Make sure you stir everything around getting the apples nice and coated. Unroll your first pie crust and cut several circles out. Continue this until you have enough crusts. I found that a wide mouth mason jar ring worked perfectly. Line each cup of your muffin tin with a tiny pie crust. I found that pinching the edge of the dough around the top edge of the tin and making a hammock of sorts worked really well. You can then gently fill the crusts with your apple mixture and push the crusts down the rest of the way. You should be able to fill until slightly mounded. Then take your equally divided butter... and put a dab on each pie. Cover as desired with left over dough. Brush with melted butter and bake at 400 for 18 to 22 minutes. I started checking in on mine at 10 minutes and checked every two until they were perfect. And YUM! They are the perfect size and I am looking forward to having the extras with my coffee in the morning. Yes, for breakfast, there is fruit in there! Enjoy making these! It's the perfect excuse to head out to an apply orchard and pick some fresh apples!

[This has some butter, so it isn't vegan, and it's naughty in general, but rules are made for breaking!] ;) Weekend Treat--Chocolate Peanut Butter Pretzel Balls One day last week, I was craving some kind of confection made from pretzels, peanut butter, and chocolate. I knew exactly what I wanted--those crispy chocolate covered peanut butter balls that are usually made with crisped rice cereal, but I wanted to substitute the cereal for some salty pretzels. I set out searching for a recipe, and found none. There were a few that came close, but none that were exactly what I was looking for. So I decided to make my own recipe. I am sooo glad I did, because these chocolate peanut butter pretzel balls are exactly what I imagined. Hmm. They need a better name. "Chocolate peanut butter pretzel balls" is too long. I asked my husband if he had ideas for another name. Big mistake. He suggested I call them "Chocolate Salty Balls," and then laughed hysterically like only a 30 year old teenage boy can. If you have any other, more appropriate suggestions, please let me know. :) Chocolate Peanut Butter Pretzel Balls 1 1/2 C pretzels 1/2 C creamy peanut butter 1 Tbsp butter, softened 2 Tbsp brown sugar 1/8 tsp salt 3 Tbsp powdered sugar 1 C semi-sweet chocolate chips Crush pretzels into small bits. (I tried this first by bashing the pretzels in a baggie. Then I tried chopping them in a food processor. The results were mostly the same, though I felt I had more control with the baggie method.) In a small bowl, combine peanut butter, butter, brown sugar and salt. Stir until all ingredients are completely blended and smooth. Add pretzel bits to peanut butter mixture and mix thoroughly. Add powdered sugar and, again, mix thoroughly. It should look like this: Prepare a chilling tray--a dinner plate covered with waxed paper works well. Take about a teaspoon of the peanut butter pretzel mixture into your fingers and gently pat it into a ball with your fingertips. (The powdered sugar will make the peanut butter less sticky, but it's still too sticky to roll well, hence the patting.) If the peanut butter starts sticking to your fingers, your fingers are too warm. Run your fingers under cold water for a minute to chill them, and begin rolling again. Place the peanut butter balls onto the plate. When you have rolled all the balls, place the entire plate into the refrigerator to chill for at least 30 minutes. After the peanut butter balls have chilled, prepare your chocolate. Pour the chocolate chips into a small microwaveable bowl. Microwave for 30 seconds and stir. If needed, microwave for another 10 seconds and stir again. Continue until the chips are completely melted, which means they stir easily into smooth, fluid chocolate with no lumps. Place one peanut butter ball into the melted chocolate and gently roll it around with a fork until completely coated. Remove from the bowl with the fork and place back on the waxed paper plate. Repeat for all other balls. Once all the peanut butter balls are coated in chocolate, return the plate to the refrigerator and chill another 30 minutes. When they're done, they should look like this: This recipe makes approximately 22 balls. It is very easy to double, triple, quadruple this recipe. But unless I can count on sharing these with several people, I stick to small batches. :) Store in the refrigerator until ready to eat. I would guess these would keep fine in the refrigerator for several days, but they never last more than two days in my house, and that's with restraint.

Cinnamon Cake: 3 eggs 1/3 cup oil ¾ cup buttermilk 1 teaspoon vanilla extract ¾ cup sour cream Vanilla Cake Mix (not white cake mix) 1 ½ teaspoon cinnamon 1 cup Cinnamon Toast Crunch, lightly crushed Cinnamon Toast Crunch Buttercream: 8 oz cream cheese, softened ½ cup butter, softened 1 teaspoon vanilla 3 cups powdered sugar 2/3 cup Cinnamon Toast Crunch powder (Crush the cereal in a bag and then sift out 2/3 cup) Directions: 1. Preheat oven to 350 degrees and line pans with 20-22 cupcake liners. 2. In a large bowl, gently combine eggs, oil, buttermilk and vanilla. 3. Mix in sour cream. 4. Add cake mix and cinnamon and mix until smooth. 5. Stir in lightly crushed cereal. 6. Fill cupcake liners ¾ full and bake for 15-18 minutes, or until an inserted knife comes out clean. 7. Buttercream: Beat cream cheese and butter until fluffy. Add Cinnamon Toast Crunch powder. Add vanilla and powdered sugar. Adjust the consistency using milk if it is too thick. 8. Pipe onto cooled cupcakes and top with cinnamon sugar and Cinnamon Toast Crunch squares.

Stir and continue cooking in 15-second intervals til melted, stirring after each interval. Stir in peanut butter. Spread mixture in an 8x8 pan lined with parchment. Cool completely. Cut into squares. Dip in melted chocolate candy coating. Lay on waxed paper to set.

Friday, August 26, 2011 BEST-EVER Chewy Chocolate Chip Cookies Readers, whatever you're doing, stop. Right now. Make these cookies NOW. I promise you won't be sorry. Well, you might be because it'll be near impossible to not eat the entire batch of these incredible cookies. I know (well, I've heard) there are people out there who like crispy cookies. I'm not one of them. I like fluffy, soft, chewy cookies--the kind that puff up when they're baking and barely spread at all. These cookies are just that. Perfectly that, in fact. I already had a really great chocolate chip cookie recipe, but I wanted to give these a shot. I was a bit skeptical of the recipe when I saw cornstarch in the ingredient list, but I decided to give them a try. I know cornstarch is very light and figured that might add some lift to the cookies. Whether it was the cornstarch or not, thse cookies definitely lifted. I used a standard-sized cookie scoop to drop them on the cookie sheet and they came out perfectly round and uniform--just ready for a photo shoot. And so, so good. The best ever, in fact.
