Baked Parmesan Zucchini - Homemade baked zucchini fries. Cut zucchini length wise. In a separate bowl combine parmesan, thyme, oregano, basil, garlic powder, salt and pepper. Place zucchini strips on baking sheet and drizzle with olive oil then sprinkle on mixture. Bake for 15 mins at 350 for 15 mins, then broil until golden brown. Makes a great guilt free snack!!!

15K+ As I stated in my last post, I am in Chicago for a week with my kiddos. Of course I arrived here with a camera with no working battery. OF COURSE! I was really looking forward to taking some pictures of my mom’s WONDERFUL cooking! That’s right! I learn from the best! But I decided to ” Make the Best of Everything” and work on some ” round up” posts. I have been meaning to do some of these for a while, as I am finding organizing recipes by category on my blog and making them easy access to my readers difficult. So Here they are. 12 NON- BREAD lunch ideas. And in this Paleo- Gluten- Free trend ( or migration). It is fun to come up with tasty recipes that might not have bread- but don’t lack flavor at all! I eat bread almost every day, but I think that sometimes it is nice to eat less of it- or perhaps, just more veggies and fruits. Athletes Foot – The powerful antifungal properties of coconut oil make it perfect for any fungal infection. Add a few drops of oregano or tea tree oil for more antifungal power. Acne – Coconut oil gently fights the bacteria that cause acne. Dab it directly on the offending pimples and watch them shrink. Cleanser – Coconut oil makes an effective and gentle cleanser to remove the grime of the day. Lice – Coconut oil kills and removes this pesky problem. Stretch Marks – Prevent and soften stretch marks from pregnancy with coconut oil for soft and supple skin. Warts and Moles – Rub oil into area and cover with a bandage.
