Mexican Shrimp Cocktail: 1-2 lb shelled and cooked shrimp (50-60 count), 2 large chopped tomatoes, ½ small white onion (chopped) or 2 green onions (chopped), ½ cup cilantro slightly chopped, ½ jalapeno (diced with seeds), 1 avocado (chopped), tomato juice (V8), lime juice, salt and pepper. Mix all in glass bowl and chill; serve with crackers or tortilla chips.
Stopped buying the jar stuff once I tasted this homemade salsa. Simple and delicious: Chop 5-6 Roma tomatoes,1 small onion and 1/2 cup fresh Cilantro. Mince 2 seeded Serrano or Jalapeño peppers and 1 clove of garlic. Add 2 tbsp. freshly squeezed lime juice and salt and peper to taste. Mix everything together and let sit overnight for flavors to meld.
Shrimp with Garlic and Parsley-- I made this the other night and while it's definitely a repeat (love the fresh herbs and lemon) it was just a little bit too spicy for us so I think I'll be cutting down on the red pepper flakes. Still, it's one of the most flavorful shrimp recipes I've found here.
