Combine raw oats, spices, applesauce, and liquid. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. Finally, set your oven to “high broil” for 3 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first, if you want your cakes to pop out. See the oatmeal cake post for Nutritional Information. Ideas: top with your favorite nut butter, pumpkin butter, banana butter, or even coconut banana butter! Or try the “cinnamon-bun frosting” linked at the beginning of this post.

I also made mine with a 1/2 tsp of spelnda/brown sugar blend and one 1 tbsp of chopped walnuts. Everything else was perfect. SOOOOO good! My batch made 22 and they are gone in 3 days....so yes, they are popular and I will definately make again. So I tried this recipe for breakfast this morning. It was pretty good! I think next time I might make it the night before and then just pop it in the oven in the morning. :) It was pretty easy. I used almond extract instead of vanilla and I didn't have any cinnamon so I used cherry-cardamom sugar. yum!

Personal baked oatmeal cups
Freezer Friendly Baked Oatmeal. Would be really good with blueberries and maple. (Good, just remember to thaw them or pop them in the microwave before eating...I was running late one morning and thought a frozen one would be fine (stupid, I know, but frozen cookies are good)...almost broke some teeth.)

Portion-Sized Freezer-Friendly Baked Oatmeal. What if I made regular oatmeal, healthy but all gussied up and then portioned then into muffin tins, Pam but no paper? I think it would make morning time quick, seeing as how baked oatmeal doesn't sound as good.
