I am all about easy these days!!! Chicken ranch tacos.....1 pkg ranch dress, 1 pkg taco seasoning, 1 can chicken broth, pour over chicken breast in crock pot and get ready to be wowed.

Crock Pot Chicken Tacos: Place about 3 pounds of bonless skinless chicken breasts in the crockpot mixed with one 1oz packet of ranch seasoning mix and one 1oz packet of taco seasoning with one can of chicken broth and cooked on low for 3 hours. Don't get me wrong, I like Mexican food but I'm not obsessed with it like so many of my friends are.  What made this recipe stand out was the ranch in it; I am a firm believer that ranch makes everything better! Here's the description from Pin I found: Chicken Ranch Tacos...These come out amazing in the crock-pot! Turns out when you click on the Original Recipe, it's nothing like the description on the pin. It called for pre-cooked chicken and gave instructions for adding seasoning and cooking it on the stove; this was definitely not what I expected when I thought I had pinned a crockpot recipe.  I decided to follow the directions on the original pin I had found on Pinterest because I really wanted to use my crockpot and I am not a fan of pre-cooked chicken.  I ended up making a 1 pound batch just in case it didn't turn out well. The meat turned out to be super tender and juicy.  Here's what it looked like after the 3 1/2 hours of cooking:  When I assembled the tacos, I used a hybrid flour/corn tortilla that I bought at Trader Joe's and topped each taco with shredded Coby and Jack cheeses, lettuce, and sour cream.  I tried it with ranch on top instead of the sour cream, and the sour cream was a much better choice...I guess too much ranch can be a bad thing.  Who knew? My final taco creation: Maybe not as pretty as the original picture but oh so delicious!  I will be making these tacos again!   Bottom Line: LOVED IT! 

It's deep into the heat of summer around here so the last thing I want to do is heat up the oven and, in turn, heat up the house! Thank goodness for the crock pot! This crock pot recipe is very similar to a stove top chicken/corn/black bean taco I make but, unlike the stove top version, you just throw the frozen chicken into the crock pot! You don't have to plan ahead enough to have the chicken thawed so you can dice up the raw meat - straight from the freezer to the crock! (Of course, if you have thawed chicken this will work perfectly, too!) Love it. You need: Chicken breasts, frozen corn, canned black beans & salsa. (Plus whatever fixings you need to turn this filling into a taco! Tortillas, cheese, lettuce, sour cream, etc - whatever you like!) Start out by rinsing your beans - get all the thick, black can juices off of them & shake off the excess water. Then just throw it all into the crock pot together, put on the lid, set it to low & walk away for about 8 hours. (If you choose to use frozen breasts I'd come in after a couple of hours & just make sure the breasts are separating as they thaw!) You can just pull it out & serve the whole breast as a main dish, if you'd like, or attack it with your tongs right there in the crock & mash it around to shred it into taco filling. After you shred it I'd put the lid back on & let it go another 30-60 minutes just to distribute the yumminess all throughout the meat. That's it! Now turn the darn thing into a taco! (Yes, we truly are that lame - all we added was cheese!!) Happy eating! Chicken [Corn & Black Bean] Tacos - Crock Pot: 3 chicken breasts 1 cup frozen corn kernels 1 1/2 cup salsa 1 can black beans, rinsed Combine everything in the crock pot & set on low for about 8 hours. Shred meat in the crock with tongs. Allow to heat for another 30 minutes. Serve as tacos with your favorite fixings.

Hearty side dish!Twice-Baked Potatoes in a Dish and Potato Skins 9 medium russet potatoes 4 ounces cream cheese 1/2 cup sour cream 4 tablespoons butter 3 cloves garlic, finely chopped 1/2 to 3/4 teaspoon salt 1/4 teaspoon pepper 1/4 to 1/2 cup milk (if potatoes are too thick) 1 jar bacon bits, or a half pound of bacon, fried and cut into bits, or cut into bits and fried 2 1/2 to 3 cups shredded cheddar cheese canola oil to fry in sour cream, if desired 3 green onions, sliced Preheat oven to 350° Fahrenheit. Scrub and pierce potatoes several times with a sharp knife. Bake potatoes at 350° for about an hour, or until potatoes give when squeezed gently with an oven-mitted hand. When potatoes are done, cut in half and carefully scoop out insides, leaving about a 1/4-inch layer of potato inside. Set skins aside. For the Twice Baked Potatoes in a Dish: Place potato insides in a large bowl or the bowl of a standing mixer. Mix briefly to break potatoes down a little. Add cream cheese, sour cream, butter, chopped garlic, and about 1/2 teaspoon salt and 1/4 teaspoon or so of pepper. Beat until thoroughly mixed, but don't mix to the point of gumminess. If the mixture seems really thick, add up to 1/2 cup milk to smooth it out to the consistency of mashed potatoes. Spray a large casserole dish with non-stick cooking spray. Spread potato mixture into the prepared pan. Cover with foil and bake for 40 minutes at 325°. Immediately after removing from oven, cover the top with 1 cup of cheese. Then sprinkle with about 2/3 of the bacon. Allow to sit for about 10-15 minutes before serving. The heat from the potatoes will melt the cheese perfectly.

Somehow I have managed to avoid Taco Bell my entire pregnancy. This has been soooo hard since I love their Mexican pizza but I knew as soon as I had one, I'd be in the drive-thru everyday ordering another. I especially love my pizza smothered in extra hot sauce and extra tomatoes. Oh the deliciousness but so so unhealthy. When I saw this homemade version on Pinterest I loaded up my grocery cart with all the ingredients that day and made it for dinner. Success! It's really good and I love that I can buy organic ingredients and grass-fed beef while still satisfying a craving. Mexican Pizza Recipe by Trader Joes Recipes Yield: 2 Mexican Pizzas Prep time: 20 min | Cook time: 25 min Ingredients 1/2 pound Trader Joe's Ground Beef or Ground Turkey 1 medium onion, diced 1 clove garlic, minced 1 tablespoon chili powder 1 teaspoon ground cumin 1/2 teaspoon paprika 1/2 teaspoon black pepper 1/2 teaspoon salt 1 15-oz can Trader Joe's Traditional Style Fat Free Refried Beans 4 9-inch flour tortillas 1/2 cup Trader Joe's Chunky Salsa, or your favorite salsa 2 cups Trader Joe's Lite 3 Cheese Blend 2 green onions, chopped 2 roma tomatoes, diced 1/4 cup Trader Joe's Extra Large Black Pitted Olives, sliced Instructions Preheat oven to 350°F. Place meat, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt, and pepper. Coat 2 pie plates with non-stick cooking spray. Place one tortilla in each pie plate and cover with a layer of refried beans. Spread half of the seasoned meat over each tortilla and then cover with a second tortilla. Bake for 10 minutes in the preheated oven. Remove from the oven and allow to cool slightly. Spread half of the salsa over the top tortillas. Top each pizza with half of the cheese, tomatoes, green onions, and olives. Return the pizzas to the oven, bake until the cheese is melted, about 5 to 10 minutes. Remove from the oven and allow to cool slightly. Slice each pizza into 4 pieces and serve.

Jalapeno Chicken Breasts. I had this on Oct 10 2012. I cooked it in the oven instead of a slow cooker. I cooked it at 400 for 20 minutes, I flipped them at 10 min. I cooked the broth with the chicken in the oven and then poured it into the cream cheese sauce on the stove on low for 10 minutes. Pour it all over the chicken and served it. I loved the sauce, it was great.
