Baked Parmesan Fries  1 + 1/2 pounds russet potatoes, scrubbed clean   1 - 2 teaspoons olive oil, plus more for greasing pans   coarse salt and fresh black pepper   1 cup panko crumbs   1/2 cup seasoned bread crumbs   1 pound cod fish   1/3 cup mayonnaise   1 cup panko crumbs   2 - 3 tablespoons grated Parmesan cheese   1 heaping teaspoon chopped fresh parsley

Oven-Fried Fish and Parmesan Oven Wedges

Bacon Potatoes: Peel whole potatoes, cut across (not too thin, not all the way through), sprinkle with pinch of salt. Next, fill cracks with bacon slices. Bake in a pan with some oil until potatoes are fully cooked. Serve.
