Green muffins! Directions:  1). Mix: 1 banana, 1 cup oat flour (take dry oats and blend them up until they become flour), 1 egg, 1 TSP nonfat plain greek yogurt, 1 Cup spinach, 1 tsp cinnamon, 1/8 to 1/4 cup Stevia, in a food processor or blender (except for the pistachios), then   2). Pour into a muffin tin sprayed lightly with oil.   3). Top with 1 TSP of crushed Pistachios.   4). Bake for 10-15 min at 350F. Easy!

Three Ingredient Banana Protein Pancakes: Ingredients 1/4 cup Cottage Cheese 1 Extra Large Egg 1/2 Banana, mashed Cinnamon  Directions 1. Whip cottage cheese in food processor until “uncurdled”.  2. Combine ingredients in bowl. 3. On a preheated skillet at medium low heat, spray nonstick cooking spray. 4. Allow cooking spray to settle and then add batter. 5. Allow to cook slowly so the pancakes don’t burn. When the edges have browned a bit, flip and cook other side.
