Oatmeal Chocolate Peanut Butter No-Bake Bars Oatmeal Chocolate Peanut Butter No-Bake Candy Bars *it is sorta like a chocolate oatmeal no bake cookie, but extra creamy and special. it almost reminds me of fudge, but with the added texture of the oats and occasional chewy sweetness of the dried cranberries--yum! **I doubled her recipe 1 cup peanut butter 2/3 cup honey 1/2 cup coconut oil (no substitutes, this is what gives its creamy texture and flavor) 2 cups oats (not instant) 1 1/4 cups mini chocolate chips 3/4 cup dried cranberries In a medium sized saucepan, melt together peanut butter, honey and coconut oil. Remove from heat and add oats, chocolate chips and dried cranberries. Stir until combined and chocolate chips are melted. Spread into a 9x13 pan. Refrigerate until hardened, about an hour. Next time if I add any chocolate chips, it will be just a few and maybe sprinkled on top so they won't melt into the batter. I hope this post was not confusing, because I am so very excited about both recipes! I know I will be making the first one on a regular basis, and I'll let you know how I do when I re-try the chewy granola bar recipe.

Step 3: Open the can without shaking it or turning upside down. Step 4: Carefully spoon out the top layer of opaque white stuff that has gathered at the top of the can. Spoon into a mixing bowl. You will be left with about 1/2 cup of white syrup-y looking translucent liquid. Leave this in the can. Note: I use this leftover liquid in numerous coconut-y recipes. Plus, it makes a great coconut syrup - almost like a hydrated extract of coconut flavor. Step 5: Add 2-3 Tbsp of powdered confectioners sugar to the white stuff. Optional: add cinnamon, vanilla bean - any small amount of flavor you'd like. Step 6: Grab a hand beater (simple mixers work just as well as expensive ones) Step 7: Whip the coconut milk froth until creamy. Start on low and move to a higher speed, move the beater in an up and down motion to infuse the mixture with as much air as possible. Step 8: Serve! You can spoon on top of ice cream, for cream pies, into coffee latte mugs, or eat with a spoon - I guarantee you'll be licking those beaters. And the bowl.

Homemade fudgsicles - tried these the other week and the kids loved them. I cut the sugar down to 1/2 a cup and they were still quite sweet. Adding the corn syrup is a real genius idea as it makes them a much less 'icy' texture like you usually get with home made ice lollys. Just a shame it's so hard to come by here in the UK.

Nutella Popsicles---Ingredients: -Chocolate milk/hazelnut chocolate milk -Nutella (Duh!) Instructions: 1-Whisk together chocolate milk and Nutella until mixed uniformly. Chill mixture for at least 2 hours. 2-Pour into Zoku pop slots (or another brand of ice pop freezing containers) and freeze. 3-ENJOY!!!
