Egg drop soup: made it. Make it all the time! I love asian soups because they are so healthy and satisfying, so there is no going wrong. I never make the same asian soup twice. They always come out a little different, but they are always amazing!
Chicken Enchilada Skillet - I used my own recipe, but this method is a keeper! I would recommend a little oil instead of cooking spray, it should keep the tortillas from getting mushy. I ended up adding them at the end which was also just fine.
