Marinated Mozzarella~ 1 pound fresh mozzarella, cut into 1/4-inch-thick slices, 3 tablespoons extra-virgin olive oil, 1 teaspoon fresh thyme, 1 teaspoon finely chopped fresh rosemary, 1 teaspoon chopped fresh oregano, 1/4 teaspoon red-pepper flakes. Asparagus Phyllo Appetizers -- 1 Package phyllo dough;1 stick unsalted butter, melted;1 bunch green asparagus, trimmed;½ cup parmesan cheese, grated;Coarse ground black pepper;½ cup mayonnaise;1 tbsp grated horseradish;1 tsp capers, minced;2 tsp whole seed mustard;salt and pepper to taste. For the sauce, mix mayo, horseradish, capers, seasonings. Blanch asparagus. Wrap in phyllo, buttering & putting cheese between three layers. Bake at 350 for 15 minutes.
