If I do say so myself, this soup turned out GREAT, and because it makes use of several "convenience" ingredients, it can be thrown together for a weeknight dinner. I also think this would make a terrific potluck dish that people would just love. Chicken Enchilada Soup. Update: made. Good and easy to make. I simmered on the stove for 3 hours, didn't use the enchilada sauce or cornstarch, added a jalapeno and chayenne, used thighs instead of breasts (cheaper), black instead of kidney beans, and excellent with cheddar and tortilla chips on top.
