Refrigerator Cucumber Salad: 4 thinly sliced cucumbers, 1 large sliced red onion, 1 large sliced green bell pepper, 1 tbsp salt, 2 cups white vinegar, 1/2-cup sugar, 1 tsp celery flakes, 1 tsp red pepper flakes, 2 handfuls of ice. Put veggies in two 1-quart canning jars. Boil rest of ingredients except ice; remove from heat; add ice; pour over veggies. Store in fridge for up to 2 months.
Make quick and easy fruit salads for the week. Use your favorite fruits: strawberries, blueberries, kiwis, bananas, etc. Add a splash of orange juice and throw it in the freezer overnight.
