    Busy mom puffins (pancake muffins) preheat oven to 350, mix 1 c pancake mix, 2/3 c water, 1/2 c syrup. mix together, pour in greased muffin pan. top with banana, blueberries, chocolate chips, pecans, sausage, bacon....etc. bake for 12-14 minutes and serve. easy, fast, delicious & no syrupy mess!! (( I made several different kinds and now I just use this as a guide for oven temp and length of time in. Very easy and good!! ))

Waffles using muffin mix! To turn the muffin mix into a waffle mix, follow the package directions but add an extra 1/3 to 1/2 cup of milk or water. The batter should flow slowly, like a thick pancake batter. For a 16-ounce box of muffin mix, add an extra 1/2 cup of liquid; for a 12- to 14-ounce box, add an extra 1/3 cup; and for a 20-ounce box, add just under 3/4 cup.

Buckwheat Pancake Mix - This stuff is bomb! I think the buckwheat flour i got is darker than what is used in the recipe, but i really enjoyed it. I used stevia powder instead of sugar and i added a few dark chocolate chips to eat pancake. I made a whole batch then frozen them and i pull them out of the freezer and pop them in the toaster and spread peanut butter on them. It's awesomely delicious!
