Vegetarian Split Pea Soup: 1 lb split peas 3 quarts water 2 diced celery 2 carrots 1 onion 1 TSP thyme 2 bay leaves 2 potatoes Bring the peas and water to boil uncovered 2 min. Simmer for 1 hour. Saute celery, carrot, onion, and thyme. Add the mixture + bay leaves and potatoes, and simmer over medium-low heat about 2-3 hours. Season to taste with salt and pepper.
