    ORZO CHICKPEA FETA SALAD 4c chicken broth 1 1/2 c dry orzo pasta 15 oz chickpeas 1c crumbled feta cheese 3/4 c chopped red onion ½ c chopped celery 2T fresh basil Cook orzo in boiling chicken broth until tender. Drain and let cool slightly. Combine with chickpeas, feta, red onion, celery, basil, and mint in a large bowl. Set aside. Cover with a vinaigrette (recipe on link) and toss to coat. 6 servings: 450 cal, 16.5 g fat, 63.8 g carbs, 5.6 g fiber, 3.8 g sugar, 15 g protein
