Baked eggplant parm - Okay, these were soooo YUMMY and easy to make. I followed the same cooking instructions but only did a mixture of half italian bread crumbs and half parm. cheese. It was prefect and so much easier than measuring. I get my italian bread crumbs at aldi's.
