Im actually pinning this again, because i just made it tonight.... and wow!!!!! its not just sooo good for you, it really tastes close to mash potatoes! if your read this... ya gotta try it!! i didnt put the cream in and it was still delish. Honey Roasted Carrots

Honey Roasted Carrots ~ 3 cups of Baby Carrots or Carrots cut into french fry like spears, 1 tbsp Honey, 1 tbsp. Olive Oil, Sea Salt, fresh Ground Pepper, Cooking Spray... I mixed the honey with some balsamic vinegar and poured on partway through cooking.

Roasted Red Potatoes. Quarter the potatoes long-wise. Toss in olive oil, salt, pepper, and rosemary. Arrange potatoes in muffin tin as shown. Add garlic clove in the middle of the potato quarters. Add half a teaspoon of olive oil on top of each garlic clove. Bake 375 for 25 minutes! Enjoy.
