If you are eating low carb, you know it can be difficult to find grab 'n go food. Well here it is, these take little preparation, just make a batch at the beginning of the week and you will have 20-30 no-carb egg muffins that will last all week for breakfast and even some snacks. You can make them ahead and then reheat them when ready to eat.
Blueberry Biscuits Biscuits: 2 Cups Flour 1 Cup milk (cold) ⅓ Cup sugar 5 T of butter (cold or frozen) 4 tsp baking powder 1 tsp salt 3 oz of blueberries (fresh or dried) Glaze: 1 Cup of powdered sugar ⅛ Cup of water 1 tsp of vanilla ½ tsp of lemon juice
Um yum....... I may never eat anything else for breakfast again. Pumpkin Muffins - only 2 ingredients. That's right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else. Bake at 350, this is a Weight Watchers treat, very low cal. (Wonder if the batter would work to make pumpkin pancakes?)
