WIN: Crispy Parmesan Zucchini Fries - Baked — UPDATE: Tried these tonight. didn't have Panko so used regular bread crumbs. Since this recipe had no amounts given for anything, I had to guess about it all. They turned out pretty yummy anyway. Kid reaction was underwhelming so I probably won't be likely to try again.
baked zucchini fries via KatiesCucina.com..I would bake them after being dipped in egg whited and white chedder soy crips from medifast. Yummy healthy next to a lean and green extra lean groud beef hamburger wrapped in lettuce and tomato!
Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.
A quesadilla is a tortilla typically filled with beans and shredded cheese then folded before being toasted or fried. Our version features cheese and cooked vegetables. Sour cream, shredded lettuce, sliced avocado, and bottled salsa make great accompaniments to quesadillas, so serve them on the side.
