    Mango Salsa Diced red onion, 1/4 of a medium sized onion Diced red pepper, 1 each Diced green pepper, 1 each Diced Anaheim chile pepper, 1 each (seeded) Diced small Jalapeno pepper, 1 each (seeded) Diced vine ripe tomatoes, 2 each (OR 1 15oz can petite cut tomatoes) Apple cider vinegar, 2 TBS Olive Oil, 2 TBS Chopped Cilantro, 1/2 of a bunch Juice of 1 lime Diced Mango, 1 each Salt and cracked pepper Method: chop, dice, and mix Refrigerate for 3 hours. Mix and Serve.

    Fresh Mango Salsa Recipe - 1 large ripe yet firm mango 1 medium red bell pepper, diced into small pieces 1 medium jalapeno 1 small red onion, diced finely, about 1/4 cup - 1/2 cup depending on sharpness 1 -2 tbsp lemon/lime juice ( +/- depending on your taste ) salt to taste little sugar to sprinkle if your mangoes are not sweet enough few sprigs of cilantro, chopped few mint leaves (optional)
