Baked Zucchini Chips: Slice thin, season w/paprika, chili powder, garlic or other, spray lightly with cooking spray. Layer on parchment paper and bake 45 min at 225 degrees. Baked zucchini chips are a great alternative to greasy, fried potato chips or french fries. They give you the same satisfaction when you have a salty, cruncy craving. All you need is zucchini, milk, panko crumbs, milk (go for skim or 1% milk fat), a little grated cheese, and some salt and pepper. Click the picture to get it baking!
Oven at 300*, cook for 30-40min. Toss thickly sliced zucchini in olive oil. In another bowl, combine parmesan cheese, bread crumbs, and a few turns of pepper. Coat zucchini, bake until browned & crisp. Serve hot! For salt and vinegar, soak slices in vinegar for 1hr and sprinkle with salt. Chipotle powder or curry powder for other flavors.
Delicious, healthy, full of Vitamin A and healthy olive oil, I am making some today! I love carrots, raw, cooked, in dishes, by themselves, with hummus, whatever, now I am going to try them as chips too. I love these posters that come with the recipe right on them!
Slice potato almost but not all the way through. Tuck butter between slices. Bake until tender. Dribble with sour cream. Shower with grated cheese. Bake again until melted and gooey. Lavish with more sour cream and chopped scallion or chili or whatever you please.
