ITALIAN LEMON-ROAST CHICKEN POT • Ingredients: 1 whole quartered chicken, ½ C flour, 1 tsp salt, 1 tsp pepper, 2 Tb olive oil, 1 Tb butter, 1 peeled & quartered sweet onion, 3 roughly chopped garlic cloves, 12 small red potatoes, 1-2 lemons cut into wedges, 1 Tb Italian Seasoning Blend, 14.5-oz can low-sodium chicken broth • Roasted broccoli or green beans, & a crusty bread loaf, for serving.
Easy Crock Pot Pot Roast with Gravy . Nancy's Notes: Easy . Not bad .I cooked for 8 hours and roast was very tender .Do not go with just one can of mushroom soup as it will be too salty or if you do do not use the whole pack of onion soup mix . Make a roux of butter and flour and add to half the sauce at the end to thicken . I have added dried mushrooms soaked in hot water at the beginning of the cooking process. Add chopped mushrooms and a little of the soaking liquid . Not sure if it makes a huge difference to the end product.
