El Torito Chicken-Lime Soup from Food.com: This recipe is an old time favorite at El Torito; and a delicious soup that we have really enjoyed. The restaurant, when submitting this recipe to the LA Times for their reader request column, also suggested that this can be made into a whole meal soup by adding hominy, corn or other grains. They also serve this at their weekend brunch.
Summer Salmon Over Cilantro-Lime Rice with Kale 4 tbsp lime juice, separated 1 tsp dried cilantro 1 tbsp honey (21g) 2 salmon fillets About 1/2 lb raw kale chopped 3-4 scallions diced 2 cups of cooked brown rice (I use the 90 second bagged kind) About 1/4 cup fresh cilantro Kosher Salt
Qdoba Rice 2 cups water 1 tablespoon butter 1 cup long-grain white rice 2 tablespoons fresh lime juice 1/2 cup chopped cilantro - Bring water t booil; stir butter and rice into water. - Cover, reduce heat to low, and simmer until rice is tender for 20 minutes. - Stir lime juice, and cilantro into cooked rice just before serving.
