Family Dinner: Chili Mac n’ Cheese, Cornbread, and Apple Crumble

Instructions:
  • Heat olive oil in a large skillet or Dutch oven over medium high heat.
  • Add 1 tbls. minced garlic, 1 chopped onion and 1- 1 1/2 lbs. ground beef, and cook until browned. Season with salt and pepper as you go.
  • Stir in 8 c. chicken broth, 1 can diced tomatoes, 1 can kidney beans, 1 can northern beans, 1 tbls. chili powder and 1 tsp. cumin.
  • Bring to a low boil and stir in 1 lb. pasta. Continue to boil on medium-low for about 8 min. or until pasta is cooked.
  • Stir in 1 c. shredded cheddar and 1 tbls. parsley.
  • Remove from heat. Sprinkle on the rest of the shredded cheddar and serve warm.
