Wine, cheese, bread and fruit perfection!

I want to take all these elements and put them on a pizza crust, my own making of course, and eat it with that glass of red wine. In fact my pizza dough is in the frig. Made it last night. So it is on my menu today.

Dorset is a washed rind cow milk cheese from the Consider Bardwell Farm in western Vermont. This absolutely delicious cheese has won medals at the American Cheese Society and the World Jersey Cheese Awards. The edible thin rind is "pretty-in-pink" and the yellow paste is buttery and semi-soft. The fresh milk aroma is followed by a deeper savory flavor. Try pairing Dorset with your favorite Chardonnay, Cabernet Sauvignon, Syrah, Tempranillo, Port, or Belgian Ale.
