    Lazy Sushi Bowl~Lazy Sushi Bowl (From Veggie Wedgie) serves 3 Ingredients: -1 c sweet brown rice -1 c shelled edamame beans -1 cucumber -1 sm avocado -2 spring onions -1 t fresh ginger juice -2 T brown rice vinegar -1 T soy sauce -1 tbsp sesame oil -2 T black sesame seeds -2 nori sheets Cook brown rice with water as instructed in the package. Blanch edamame. Chop avocado and cucumber very small. Mix ginger juice, rice vinegar& soy sauce.Pour over vegs& let sit,till rice is done.

I love love love sushi! It is my go to meal when I'm out for lunch or picking a restaurant for dinner. Most options are low FODMAP - be careful with avocado as Monash only recommends 1/8 per serving to be safe. Also be careful of deep fried options and other high fodmap ingredients!
