    Blueberry Zucchini Cake with Lemon Buttercream- ok first of all, I bake a lot. This buttercream frosting might possibly be my favorite frosting of all time! Ok, onto the cake. I made a few changes. I used coconut oil instead of vegetable oil. So much better flavor anyways. I didn't have 2 cups of zucchini so I shredded apples in place of about 1 1/2 cups of the zucchini. Oh and the sugar...I cut that down to 1 3/4 cup but honestly it didn't even need that much. I will be making this again.
