Back to school + crazy schedules = crock pot dinners Share your Favorites! I'll start with one of the best (and easiest) I've tried. Ingredients: 1 bag of frozen tortellini 1 small bag of fresh spinach 2 cans of Italian style diced tomatoes 1 box or 4 cups or vegetable broth (i used 2 c low sodium, 2 c regular) 1 block of cream cheese, cut in chunks (I used light) Directions: Put all ingredients in crock-pot & cook on low for 5-6 hrs.
