5 STARS! This is such a GREAT recipe for those doing low carb! I made a whole muffin pan full and put them in my refrigerator and had breakfast all week! (You can also freeze them!) Changes: The only thing I added (which I had seen on another Pinterest recipe) was some garlic and herb laughing cow cheese. It made them creamy and oh sooo good! I also added diced ham and crumbled sausage for protein. YUMMY!!!
