Grilled Brussels Sprouts - olive oil, minced garlic, dry mustard, smoked paprika, kosher salt, and black pepper...... Ingredients: 1 pound of Brussels Sprouts 2 Tablespoons whole grain mustard 2 Tablespoons Olive oil Salt & pepper, to taste Equipment needed: Bamboo skewers BBQ or Grill pan Method: Bring a large pot of water to a boil. Blanch the sprouts (i.e. cook them in the boiling water) for 3-4 minutes. Remove sprouts from the boiling water and rinse with cold water (or plunge into an ice bath). Remove sprouts from cold water and pat dry. Trim the bottom stems of the sprouts, and remove the outer leaves. Mix together the mustard, olive oil, salt, and pepper. In a small bowl, toss the Brussels Sprouts in the mustard sauce. Allow to marinate for 30 minutes. Once sprouts have marinated, prepare them for grilling. Skewer sprouts, placing 3-4 sprouts on each skewer. (Note: Since the sprouts aren’t cooked all the way through yet, they are a bit tough to skewer. You can also place the sprouts directly on the grill without a skewer, if they are large enough to not slip through the grill grate.) When the grill is nice and hot, place the skewered sprouts on the grill. Grill for 3-5 minutes on each side, or until the sprouts are nicely charred on all sides. When ready, remove the sprouts from the grill and toss with a bit more mustard sauce. Enjoy immediately!

I deliberatly use dried spices so I know I've got what I need on hand. My husband doesn't eat dairy, but I imagine topping with a gorgonzola or even a hard cheese like parmesan or romano would be a great addition.

For the pesto: * 1/3 cup olive oil * 1/2 cup green olives, coarsely chopped * 1 cup fresh Italian parsley or basil, coarsely chopped (I used basil) * 1/2 cup fresh oregano, coarsely chopped * 1/2 cup fresh thyme, coarsely chopped * Mix olives and fresh herbs in a medium-sized bowl. Stir in olive oil and season with salt and pepper. Mix until homogenous. Set aside. For the polenta: * 2 cups polenta * 8 cups water (depending on how thick you like your polenta) * 1/2 cup hard cheese, shredded (Parmesan or Grueyere are both great for this) * 3/4 teaspoon salt * Heat water in a large pot, when boiling, slowly pour in polenta. Lower the temperature to simmer and cook for about 20-25 minutes, until polenta has absorbed the water. Take pot off flame and stir in shredded cheese and salt. Season with salt and pepper. Cover and set aside until plating. For the poached eggs: * 4 eggs * 1 teaspoon lightly-colored vinegar (any type will do, just not balsamic as it will color the eggs) * salt * Crack eggs into a small bowl, set aside. Heat another medium-sized pot with water, adding a sprinkle of salt and teaspoon of vinegar to water. When water is at a boil, slip the four eggs into the water bath, swirling with a spoon to help eggs form into solid shapes. Cook for about four minutes for a slightly runny center. How to assemble the dish: * ladle about 1 1/2 cups of the polenta into a large bowl, add an egg to each bowl, garnish with the olive-herb pesto. Spaghetti Squash Au Gratin -- Made this tonight and the flavor is really similar to potato hashbrown casserole. The squash is a little crunchier than potatoes, but all in all it was a success in this house. Easy to prepare which was a definite bonus :) ---review---This was excellent, though I added a little butter and subbed the sour cream with Greek yogurt, and added a little more cheese.. I didn't think it tasted like hash browns at all though.
