Blueberry Coconut Pecan Breakfast Cookies [recipe, gluten and sugar free] I played with this recipe a lot because it calls for 3(!!) mashed bananas, and I don't, erm *love* bananas. Still a great idea, but I've taken the bananas out, added applesauce, maple syrup, almond flour, and xylitol. Not this recipe, by a long shot, but a good inspiration!

I make this for my two year old all the time, breakfast, snack whatever. He loves it. PS I don't soak the oats, just throw them in dry. Works fine.

I made these this morning again, they work great for freezing too. Just make a whole bunch, freeze them in their own bags and you can enjoy an easy, nutrient rich, microwavable breakfast everyday.

Breakfast Muffins 1 package of Pillsbury Biscuits (10 biscuits) 5 slices of bacon (cooked and cut into pieces) 4 eggs scrambled 5 cheese slices 1 egg yolk 1 tbsp. water Pepper to taste Instructions Preheat oven to 375F. Top each biscuit with a spoonful of egg, a spoonful of bacon and 1/2 slice of cheese. Pull up on each corner to form into a ball, pressing together at the seam. 15-20mi.
